easy and yummy mini quiche








This quick and easy quiche is the lazy girls guide to healthy eating, quick entertaining, and even meals on the run. These mini quiche are yummy, healthy and again... super quick, easy and mess free. Are you ready?

 
 







To start pre heat oven to 350 degrees and gather the following:
 
- Muffin tray
- Whole wheat tortilla wraps
- Eggs (5)
- * Onion (about 1/2 chopped)
- * Fresh garlic (2-3 cloves; chopped)
- * Salsa
 
* = Options
NOTE: You can add any cut up vegetables or meat you would like to this
Other great options:
- * Cooked and chopped ham
- * Any chopped lunch meat
- * Bacon
- * Tomato
- * Spinach
- * Peppers
- * Cheese  
 
1. You then want to get a cookie cutter or cup that is about 3.5 inches in diameter and cut out circles from the whole wheat wrap. Place the circles in the tray and push down to help form the inside of the tin. ( I lightly greased muffin tray before placing wraps in to avoid any unnecessary sticking if the eggs spilled over ).

 2. Then grab eggs from the fridge, break open and whisk together. ( I used 5 eggs for 12 mini quiche).  Once eggs are mixed together you are free to add any filling your heart desires... again, for the ones you see here I used 1/2 a chopped white onion, 3 chopped cloves of garlic, and a few table spoons of store bought salsa. * Scroll back to the top for other options to put in your egg mix.
Top with a sprinkle of salt and pepper (or seasoning of choice) and you are on to step #3.

 3. Once all is mixed together you are ready to pour egg mixture into whole wheat wraps you have placed in the muffin tray. You are going to want to place just enough egg mixture into the tortilla to fill it, but not overflow. This allows the egg to bake up and over the side, but not spill into the tray.

veggies, or what ever you have in the fridge

4. Once you have your tray filled, place into your preheated oven (350 degrees) for 15 - 30 minutes. * Please note each oven is different and will need different times for baking allowance. If you have a older oven you may want to bake for 15 min, then turn the tray around to ensure even baking throughout.
* Eggs will be golden when ready, and after inserting a toothpick into the centre it will come out clean.

 5. Once your mini quiche are baked and ready, take them out of the oven and cool for a few minutes. ( Don't forget to turn off the oven when you are done.)

These mini quiche can be served right away with your favourite sauce, by their self, or accompanied with a delicious salad ( or bacon ... yummy).  However you are going to eat them, there is no doubt you will enjoy them.
